Ingredients

  • 1 tablespoon olive oil
  • 1/4 of an onion, diced
  • 2 garlic cloves (rough chopped )
  • 2 cups chopped veggies – asparagus, snow peas, mushrooms, bok choy, shredded cabbage, chard, kale, bell pepper, zucchini, carrots.
  • 4 eggs, whisked
  • 2 tablespoons sour cream
  • 1/4 teaspoon salt and pepper
  • optional: melty cheese (cheddar, mozzarella, goat cheese, etc.)
  • additional toppings- fresh herbs or scallions, fresh tomatoes, sprouts, avocado, sriracha, seeds – sunflower, hemp, pumpkin seeds – all optional.

Instructions

  1. Heat oil in a non-stick skillet over medium heat. Saute onion, garlic and the veggies, until veggies are cooked through. Season veggies with salt.
  2. Whisk the eggs in a bowl, add sour cream and salt and pepper.
  3. Scoot the veggies aside, add more oil if needed, and pour in the eggs, lowering the heat and gently scramble. Add optional cheese then mix with the veggies, sauteeing until cheese has melted.
  4. Stir in any fresh herbs or scallions and divide among 2 bowls. Top with any of the toppings.

Notes

Feel free to replace eggs with 8 ounces tofu, crumbled- leave ut the sour cream. Season with a splash of soy sauce if you like.
